Summer Update

Thanksgiving 2014

 
I love cooking with my boys. It really helps and takes the stress off of me during the holidays. Jaedan prepared a sweet potatoe pie and Malik made dinner rolls.
 

My oldest started working this year and of course they would schedule him to work on Thanksgiving. So in order to have the whole family together we had to eat early. By prepping some things ahead of time really helped me get things done in time. .


Of course sometimes things don't always go as planned. I was preparing the macaroni and cheese when I realized I didn't have any pasta. My husband rescued me by running out and getting some.

 
In thee end dinner was great, and Ben got to work on time. We spent the day being couch potatoes and watching football and movies. I am very thankful for my family and the times we share together.

Bulk Cooking 10/12/14




I really love the benefits of bulk cooking on Sunday for the week. It takes a lot of work but I feel it is well worth it. I have notice the more I do it the faster I get each week.


This week menu is:
  1. Lasagna
  2. Beef and Bean Burrito
  3. Buffalo Chicken Pasta
  4. Chicken Spaghetti
  5. Chicken Pot Pie (not pictured)
  6. Diced Chicken Breast


I also made homemade English Muffins. I used them to make Breakfast Pizza.

Weekly Bulk Cooking



As you all may know recently I found out I am insuline resistance. Which meant that my eating habits had to change drastically. With that being said I had to plan my meals differently. My family on the other hand still wanted their comfort meals. So I decided to start bulk cooking on the weekend. Below are a few of weeks past mommy meals the rest is for the family. This works out much better for me.




Chicken Noodle Soup, Chicken Spaghetti, Cornbread Muffins and Chicken Enchiladas




Chicken Salad with Feta and Sautéed Mushrooms


Strawberry Chicken Salad and Chicken Cobb Salads

Cabbage Soup







Meat loaf, Burritos, Lasanga and Breakfast Pizza




Tilapia with Spinach and Kale




Mock Potatoe Soup with Cucumber Salad




Egg Salad on Lettuce




Breakfast Quiche, Cinninati Chili, Sloppy Joe, Mexican Rice and Fajitas

Japanese Cooking Class



Today we experienced a hands-on, intimate and practical cooking class. We made two kid friendly dishes japanese curry and pan fried yakisoba noodles. Our teacher "Mrs. Yoshida" did a great job involving everyone in the cooking process. We look forward to future classes.

For dinner today I made Heavenly Hummus Wraps. I saw a picture of this recipe posted by The Pioneer Woman on Facebook and I just had to make it. I have been on a quest to serve my family more healthy meals. This recipe was very flavorful and filling.

Well all the men in my life are happy right now. I always try to find new recipes for game day. This year I made it more balanced than previous years. They are enjoying everything so I guess I didn't do so bad. Now if I only understood football.......

Preparing For Thanksgiving


I remember sitting in my grandmothers kitchen prepping food for the holidays. For some reason I always got stuck with the job of chopping the onions, celery and bell peppers. I guess I am carrying on the traditions with my sons by putting them to work. Funny thing is one of the first kitchen gadgets I purchased as and adult was a food processor.
